While on spring break in Baja, Mexico, Ralph Rubio stumbled upon a small taco stand. He was delighted by the character of the man behind the counter named Carlos. The specialty at this particular taco stand was fish tacos. Carlos prepared fried fish to order and put it on a warm tortilla; customers where then able to add whatever condiments they wanted.
Rubio had one bite and was immediately hooked. He was so moved by this wonderfully delicious snack that he begged Carlos to move back to San Diego with him so that they could introduce fish tacos to America. Carlos thought he was a little funny in the head and replied, “What! Are you crazy amigo, I am perfectly happy here”. Carlos was a little worried about this patron but soon realized if things got out of hand, he could quickly douse him with hot fish oil and break.
Rubio had grand ideas of introducing the fish taco to Americans and wondered how he could persuade Carlos to come with him – he returned to the stand everyday after that. Carlos grew so tired of Rubio asking him to leave that one day he offered to share his recipe with him. Rubio couldn’t believe his ears and asked Carlos to repeat himself. “Si, I will give you the recipe to my delicious fish tacos, amigo”, Carlos repeated.
Well the rest is history folks and in 1983 Rubio’s in San Diego, California, popularized the Fish Taco in the surrounding area.
What do you think about fish tacos? Personally, when I first heard of these – it sounded really weird and unappealing. After ordering some at a local restaurant, I found that they are actually pretty tasty!
