Games I've played that are easy to play on a harder difficulty include:
- Ducktales (NES)
- Kirby's Dream Land (Game Boy)
- Sonic Drift (Game Gear)
- Tiny Toon Adventures: Buster Busts Loose (SNES)
- Aladdin (Game Boy)
- Super Smash Bros. Melee (Gamecube)
- Mario Kart: Double Dash!! (Gamecube)
What are some others you can think of?

Sonic Pocket Adventure on Neo Geo Pocket: Normal mode isn't at all any different from Easy Mode
You guys probably won't belive me on this but....Super smash bros. Brawl IMO isn't that bad on Intense difficulty in Classic mode (Beat it using Kirby).
Instead of getting the loud yell of "CONGRATULATIONS!" at the end of the game, I was greeted with the loud yell of "WOW! INCREDIBLE!". :lol:

To me, T.M.N.T IV: Turtles in Time is easier on higher difficulties, cause it gives you more continues. All three difficulties are pretty easy for me, so when I put it on hard and it gives me 5 continues instead of 2 or 3...that just makes it all the easier.

"Super Smash Bros. Melee" is also easy on a hard difficulty; that is how I unlocked the Master Hand and Giga Bowser trophies. ;)

To tell you the truth, the best games have not difficulty to adjust; for instance, "Super Castlevania VI". 8)
