okay I've been out of the loop for a bit because I was busy upgrading and researching video quality of my consoles. I decided to try running things on s-video to see what the difference would be and here's what I discovered so far
1: do NOT buy those aftermarket snes s-video cables, they DO NOT give you s-video picture. I bought one, I was really excited about it, then when I plugged it in the picture was really weird. So I took a look at the pins on the cable and they wired the s-video into the composite pins..... so basically it wasn't s-video at all
so I built myself a snes s-video cable using an official nintendo composite cable and a s-video cord. And H#LY CRAP WHAT A DIFFERENCE. Honestly I've played actual arcade machines running on fully blown rgb moniters. And uhh...well....s-video is pretty much the same thing to me.
If you want better sound, then get yourself a sound cord that splits the left and right channel.
Now here's the tricky part, some older systems (like the sega genesis and neo-geo) look pretty terrible through a composite video cable. Both these systems have outputs for rgb, but not for s-video. So what options do you have? 1: buy a really expensive rgb to s-video adapter. Or 2: buy an inexpensive rgb to s-video adapter and have a fun time wiring it up yourself, this requires a good amount of technical skill to do. Or 3: do the most difficult thing and build yourself a s-video mod interally inside the console (good luck it's extremely difficult and requires building your own circuit boards) *edit* you also need the right graphics processor in your genesis to do the internal mod
