I think these are the toys your're looking for. I remember these and I think I used to have the blue one.
They are called Tacky Tacky Stretchoids. You could take of all their armor and they would just be that squisy plastic like those wacky wall walker things (anyone remember those). I remember stretching those things too much and the arms or legs would come off.
