This is the time of year I look for unusual but easy recipes.
Love the idea of using saltine crackers in a desert.
Ingredients
2 cups Milk
2 beaten Egg Yolks
1/4 cup Sugar
1/2 cup Shredded Coconut
1 tsp Vanilla
2 Egg Whites
1/4 dash Sugar
1 cup Coarsely Crushed Saltine Crackers
In a saucepan gradually stir milk into egg yolks, add 1/4 cup sugar.
Cook and stir over medium heat till thick and bubbly. Remove from heat.
Stir in crackers, coconut and vanilla.
Pour into a 1 quart casserole dish.
Beat egg whites till soft peaks form, very gradually add 1/2 cup sugar, beat till stiff peaks form.
Spread egg white meringue over hot pudding.
Bake at 350 for 12 to 15 minutes.
Let cool to serve warm or cold.
