If you like RPGs, my personal favorite for the SNES is Breath of Fire II. The translation's shaky, but it's still better than Final Fantasy II's. It's a damn fun game, with a respectable cast of characters and a surprisingly deep story. That said, it IS a direct sequel to the original Breath of Fire, so I recommend playing that first for continuity's sake.
Lufia & The Fortress of Doom and Lufia II are also worth picking up. They have the best translation that I've ever seen for an RPG of that era. The characters are solid, and you'll definately grow attached to them. Other than that, they're typical old-style RPGs.
I've never played Earthbound, but some people on here swear by it. Pick it up, but you'll probably have to get it from eBay as it's kind of rare. And very expensive.
Aside from RPGs, check out: Mega Man X-X3, Super Castlevania IV/Dracula X, ActRaiser, Earthworm Jim/Earthworm Jim 2, the Super Star Wars trilogy, EVO: Search For Eden, YS III, and the Desert/Jungle/Urban Strike games.
