Hmm, what cartoons do I have on DVD/VHS? To list them all would probably take half a day, so I'll just list the ones I know I have on hand (and some my sister has).
Some quick notes:
a) Official release means that it is on DVD at a store where you can buy or rent DVDs
Unofficial release means that it hasn't been released on DVD and I basically found bootlegged copies of said cartoon (through trade or purchase) or taped them from television
b) I'm strictly focusing on the cartoons, not the live-action shows, since I don't really have that many live action shows. But if you must know: I have Titus, Married With Children, and seasons 1-3 of Saturday Night Live (along with some "Best of" specials [i.e., "The Best of Eddie Murphy," "The Best of Halloween Sketches," etc]) on official release. And speaking of SNL, I also have some unofficial release episodes I either got in a trade or taped from NBC.
Looney Tunes (I have a buttload of Looney Tunes shorts on both VHS and DVD both official and unofficial release. I don't have all of them, but I do have some of my favorites and some shorts that don't air on TV due to racial/ethnic stereotyping)
Disney shorts (I just have the World War II cartoon collection. Yes, it is an official release)
Top Cat (official release; complete series [I never realized that this show was short-lived])
Beetlejuice (unofficial release; all 109 episodes; bought it at a comic book store in Philadelphia that also sold unofficial releases of 1980s-1990s cartoons)
South Park (volumes 1-6 [official release])
Family Guy (volumes 1-5 [official release])
The Simpsons (official release; seasons 2, 3, 4, 5, 6, 7, 8, 9, and 11 [I gave season one to my sister since I don't like that season, I never bought season 10 since that was a crappy season too, and currently, I don't have the money to get season 12]).
Chip and Dale: Rescue Rangers (originally, I got volume one of the official release, but I sold it, and got an unofficial release featuring all 65 episodes -- all taped from Toon Disney before they pulled "A Lean on the Property" after the 9/11 attacks)
Duckman (unofficial release, even though there is an official release out there [albeit one that has some music edited due to copyright issues)
Extreme Ghostbusters (unofficial release; only three episodes)
Toonsylvania (unofficial release; select episodes)
The Oblongs (official release; complete series)
Tripping the Rift (official release; complete seasons 1 and 2)
Cow and Chicken (unofficial release; select episodes)
Garfield (official release; volumes 2 and 3; gave them to my sister since she likes Garfield more than I do)
Animaniacs (volumes 1-3; official release; my sister took them before she moved out)
Heathcliff (volume 1 on official release; a collection of Catillac Cats cartoons on unofficial release)
The Mask: The Animated Series (unofficial release, in both Mexican Spanish and English. The Mexican Spanish version is the complete series; the English version has every episode except "(The Angels Wanna Wear My) Green Mask" and "To Bee or Not To Bee"
Earthworm Jim (unofficial release on DVD; select episodes, all of which are from season 1. Also have an official release VHS with select episodes)
Outlaw Star (official release; complete series -- uncut and uncensored)
Cowboy Bebop (official release; select episodes -- uncut and uncensored)
Sailor Moon (official release; select episodes from Sailor Moon R [the second season] and Sailor Moon Super-S [the fourth season]. My sister has an official release of Sailor Moon season one and Sailor Moon S [season three]. The Sailor Moon R episodes I have are the DiC dubbed version. Sailor Moon Super-S is uncut. Scooby doo original seasons 1 and 2. Plus the 3rd and i guess its a 4th season that has the 40. 32 plus the others that are pretty hard to find.
