It's made out of the first three chambers of a cow's stomach and marinated in some sort of Chinese herbs and spices or something. The flavour is acceptable but the texture is just disgusting. Chewing it doesn't seem to break it down at all.

I have had bits of tripe in a hot pot at a pho restaurant and it wasn't great. It had a bad texture (think the rubbery and pebbly texture of the skin of a football) and no taste.
